1 Boembloc Goelai Ajam
500-800 g chicken, bone-in and cut into serving pieces (skin on is best). You can use bone-in thighs or drumsticks.
250 ml water
1. Put the chicken, Boembloc Goelai, and water in a pan. Place it on medium-high heat and cover with a lid.
2. After 10 to 15 minutes, take off the lid and stir so the chicken gets coated with the sauce. Lower the heat to medium-low and cover the pan again.
3. Let it simmer and stir now and then until the chicken is tender and the sauce thickens. This usually takes about 15 to 20 minutes.
Serve the chicken warm over white rice. For more texture and flavor, sprinkle crispy fried shallots or sliced spring onions on top. You can also add cooling sides, for a tangy contrast. If you like a bit of heat, try adding a spoonful of sambal.
